Pho is amazing. The broth is full of flavor! I've been here 3 times and it's my new fav spot. Glad to have this place here as there is nothing else around that particular area that serves pho. Nice lady runs it and is super friendly. Eager to try some of their other dishes!
Warm and inviting staff. I had the Sp1 and it was fantastic! Fresh tender crisp veggies and the chicken and shrimp cooked to perfection. Amazing flavor. My husband had B1 again the veggies were nice and fresh. Pork and shrimp cooked perfectly. Portions were very generous. Salad rolls are also very good. Can’t wait to go back and try their pho.
We ordered the bahn mi sandwich which was amazing. My boyfriend got chowmein noodles which were also delicious and I got a vermicelli plate with shrimp and pork that was really good too. We also ordered salt and pepper calamari that didn't taste salt and pepper at all not we're nice and tender and also Vietnamese wings that were also kind of bland. We used to love going to the cookie chicken and decided to try this place after it closed down. All in all the main dishes were better than the cookie chickens but the sides were lacking in flavor.
Loved their wonton noodle soup. I think the lemongrass chicken needs more lemongrass flavor.
Hands down the best pho. The service was amazing and they really made us feel important and took such great care of us. The customer service is 10/10. The food is delicious and the restaurant is very clean and new. Overall I will be coming back here again with my family. Loved it!!

This is officially the best Pho restaurant in Vancouver. None of the other places I've been to do not even come close. They recently opened in January 2022. The first thing we noticed was the freshness of the food when it arrived. The yakisoba and chicken was amazing!! The broth in the Pho was perfect. Definitely give this new place a try.
Came here for Sunday lunch during the lunchtime rush with my wife. They were very accommodating, especially since they were pretty busy.Ambiance - very clean. You would know immediately that you were at a Vietnamese restaurant.Service - very friendly. The staff went above and beyond to make sure we were situated and knew what the daily specials were. Not in a push way, but in a genuine, great service way.Food - delicious! Authentic Vietnamese. The portions were big and the prices were low. We ordered the Pho, salt n pepper squid, salad rolls, and a Thai iced tea with boba. All were delicious. Seriously.Overall, great place if you're looking for a casual spot with great good. Would definitely stop in again when I'm in the area.
Me an my boyfriend tryed this new pho restaurant. We decided to try some of their delicious appetizers. We tryed the crunchy shrimp as well as their fried wontons. We also ordered the yakisoba with shrimp, chicken and beef. We enjoyed it all, we will be back to try more delicious food!
In my eternal search for the perfect broth, I have searched near and Pho. I have started to run out of places in central Vancouver and find myself wandering further afield. Ruby Pho is pretty new and it seems like a lot of the buzz is based on their sandwiches. My first impressions of the decor was that it was just a touch on the generic side, clean, but not a lot of character. The waiter was pleasant, but not as friendly or welcoming as so many of their competitors... Not bad, but not particularly enthusiastic. None of that is particularly important if the Pho is amazing.I start out with the Coconut Shrimp and it's great! Succulent and crunchy, piping hot and tender. And then comes the Beef Pho and it's similar to the atmosphere, Clean, simple, unassuming, but to my taste lacking the depth and complexity that I have come to love. To be clear, not bad, but just not great. Luckily they have well stocked condiment tray so I can dial things up a bit myself.There is so much potential in these places. Potential to make the customer feel cared for and satiated with layers of decor and flavor. Vancouver has a lot of really amazing Pho places, not to mention Tom Yums and Ramens. Places where you feel like you are visiting another country and the the staff are taking you on a journey, but not Ruby Pho. It's just a pretty good place that I would visit often if I lived in the neighborhood, but wouldn't go out of my way for. Dare I say it, I think the owners would benefit from some visits to their competitors.All that said, Maybe the place they shine is their sandwiches, but before I will delve into a restaurant's deeper possibilities, I need to be baptized in broth. I need to be dipped three times and come up satiated and limp.Ruby Pho gets 4 stars because I liked the shrimp and because the broth noodle was plentiful and because the broth, although a touch on the bland side, was still honest and ample.If I find my way back, I'll try the sandwiches and maybe that will fire me up like a bonfire on the coast.
