Chimayo lived up to it's excellent reputation. The menu is not overwhelming and our server, Tyler was just amazing: instead of guiding the 5 of us to 5 entrees; we shared 3 dishes: one salad and two apps: all were excellent. The Elk London Broil and the Trout fajitas should not be missed. For starters we shared the Guac with Crabmeat which was sublime. The only downside is the space is a little small and the noise level is loud. That is a minor inconvenience to enjoy a greal meal.

I have been going to Chimayo for 25 years though it has been about 10 years since the last time. Still amazing and one of my 5 favorite restaurants in the U.S.

This was our second visit in 6 years…amazing again! Food was delicious and service excellent. A must try while in Park City on vacation!

It has been years since our last to visit Park City and dining at Chi mayo. It did not disappoint. The menu continues to evolve, inspired by Mexican and Southwestern cuisines with the chef’s unique inspirations. As much as we wanted to explore the menu, we made our bets. I went with the watermelon salad, which was wonderfully light and summery with watermelon and blueberries with a solid foundation of tart arugula. My main was the much reviewed and acclaimed short ribs. This was a very interesting dish. The short ribs were wrapped tightly together after searing in a cylinder that was wonderfully glazed with a slightly sweet barbecue sauce. The cylinder was topped with onion rings attached with mashed potatoes with chives blooming from the top. It was served bedded in a verde hominy sauce that was in wonderful contrast to the barbecue sauce. Spectacular as plated and a truly memorable meal. We need to get back again, soon.

One of the standout restaurants in a city which has many fine places to eat out. Chimayo continues to serve creative and interesting southwestern dishes, a refreshing contrast to the numerous New-American eateries in town. This is far from your typical Tex-Mex establishment; dishes are skillfully executed and beautifully presented. Standout items: guacamole with snow crab; duck enchiladas, trout fajitas, blackened hanger steak.
