Liberty BBQ is flavorful and well prepared. I ordered the three meat plate and was impressed by the quality of the rib, brisket, and jalapeño sausage. Every bite was tender, juicy, and scrumptious. The white cheddar mac & cheese was heavenly divine. Our waitress was hospitable and my friend said his michelada was reinvigorating. This restaurant atmosphere is relaxed and suitable for big groups. The fries were too salty for my taste tho. I would like to explore more of the menu.
Caveat: Keep in mind...we wanted good BBQ.True story...the only reason my son and I ended up in the area is because we were promised a free lunch ?. After some serious discussions, we found a place that served "BBQ" as well as fries. If I remember correctly, the eatery is located in the downtown area. Parking wasn't bad at all because of the free parking garage around the corner. The curb appeal makes it quite welcoming AND there was a young man posted at the door to escort our small party in. The ambience was unexpectedly quiet. As soon as we sat, our server immediately came over and took the drink orders. He continuously checked on us. They have free WiFi! I point this out because my son made a great point during the downward slope of COVID, "if you have customers scan a code for the menu... provide WiFi." I didn't need the menu because I had already perused it during the drive over ??. Prepared! We ordered the trash fries and deviled eggs for apps. The trash fries were huge, delicious and very filling. They don't skim on the toppings! The server plopped a bottle of BBQ sauce on the table and trust me on this one...add it to the trash fries! My son's burger patty was a blend of meats and quite delicious. My niece's stuffed grilled cheese was also good. I got the ribs. They were basted with a sweet sauce. Quite tender. One problem...they tasted like fuel. I had the other two taste them and they agreed. I didn't bother to complain because I just wasn't in the mood. My mind immediately changed focus when I ordered the banana pudding. I enjoyed every bite. The other two ordered cherry pies but didn't eat them. They said they were cold and tasted "weird". I didn't try it. The only fruit pie I consume is apple pie...why mess with a good thing ?. The server was attentive and courteous but the main reason for choosing this eatery was for the BBQ. It just was not good. They have other things that can be enjoyed though.
Great food and employees. The brisket is so tender and moist. You can cut the brisket with a fork. The pork ribs tender , juicy, and delightful. Perferfect amount of sauce. The barbeque sauce was good.The sides were creamy potato salad, white queso mac and cheese. They have several other sides to choose from. The fried pickles were made like fries which had the right amount of crunch,sour, and salt. The sausage is very good. The boubon cherry pie and the banana pudding were very good. Also the cherry pie came with vanilla ice cream which was a nice surprise. The banana pudding was very creamy. Our waiter was very good with checking on us. The decor is very much based on Liberty just like the statue of liberty.
As we are on road a lot and have been traveling non stop the past year. It always refreshing to find some truly good food.The rib-eye steak was wonderful as well as the barbecue. The pinto beans were the best I have ever had. Small things mean a lot the homemade picklesWarmed by heart….. 5 stars
Really good bbq and prices are fair.First, I walked in this place and was greater by a very friendly (proper) young lady (blonde - I forget her name). It wasn't busy and she struck up a quick conversation and walked me through the menu.The meats were very lean and very flavorful. The trash fries were outstanding!The Mac and cheese was ok - I would have done something a bit more southern style with this type of BBQ. But it was good.Over all, my first bbq whole back in teaxs and I was NOT AT ALL disappointed. It was really good.
Excellent food and service. Brisket was great. Appetizers were decent but not great. The Banana pudding, which is pretty much at every bbq place, but here it’s one of the best desserts I’ve ever had in my life of any kind. Overall just a great place. Bbq sauce is excellent here as well.
absolutely fantastic, great price for the quality and quantity you get.... there is no better BBQ around town! THE BBQ SAUCE IS HEAVEN SENT! the trash fries are more than amazing, they had perfect seasoning with great toppings, it will easily feed 3 to 4 people. my husband and I split the 3 meat plate and the ribs literally fell off the bone, i personally I have always been super picky about ribs but these ribs were so good that my husband and I fought over who got the last one. the jalapeno cheese sausage was spicy and had a great kick to it... we paired this with the potato salad and parmesan green beans... they definitely know how to make homemade potato salad. not to mention our server was such a delight, he was funny, charming and really attentive to whatever we needed. he seemed to genuinely love his job and care about our happiness while eating.

After a boatload of airline delays, I finally got into Round Rock and gave Liberty a try. I was very surprised! It was very good. I had the three meat plate so I could try a variety. The ribs and jalapeño cheddar sausage were very good. The brisket was excellent. It passed the bend and pull tests. The Mac and cheese was different, but very good. The fries were crispy on the out side and soft in the middle. Definitely will go back if I am in Round Rock again and would highly recommend!
