Great food! I have to say we can't go to the beehive without stopping for beignets or garlic fries or both....The food is fresh and made to order and the owner/chef is very creative and flexible with dietary issues.
We decided to try some local food trucks while traveling through Salem, and we struck gold with this one. We loved the spicy chicken and beignets. Wish there was an Easy Otter closer than 400 miles from our home, but we'd definitely go back next time we're in Oregon.

Very good version of fried chicken and waffles. Chicken portions were good size and cooked to perfection. Waffles just the right crispness. My wife had the Turkey pesto panini sandwich and said it was great. Quick service too.

My wife who is very picky got the chicken sandwich and said it’s the best she’s had. My first time trying Nashville style hot chicken and the bar is set high! Very flavorful and crispy crunchy chicken with some of the best waffles I’ve tried too! Good portions and not over priced. Can’t wait to go back!
The yummiest chicken made by the kindest human. Consistently delicious food and great customer service r. The beignets are amaaaaazing too! :) so glad we live right down the road!
The best fried chicken in Salem. Her new sandwich with BBQ, Bacon, Cheddar is to die for. All the standard fare is delicious as well. She is quick, kind, caring. Just the loveliest little food truck you’d ever wanna eat at. :)
Best fried chicken sandwich ever! Love her chipotle aioli, it is to die for! And her beignets and flavors are always so on point. I have never eaten anything less than perfection from Easy Otter!
Customer service: Kind of rude. My boyfriend asked if they charge for extra ranch because he knows he likes a lot and sometimes businesses charge for extra (no big deal). The person said "no way" when asked if they charge extra. My boyfriend asked for four extra ranch and the person said, "oh wow okay," and did not come across as friendly at all.Food: Both my boyfriend and I found the chicken to be dry. I didn't care for the flavor. The garlic fries were alright/nothing special. My boyfriend didn't care for the beignets but I thought the cinnamon roll one was delicious. The beignets is the only reason for two stars.
