I like my coffee black, no cream or sugar, simple drip brewed. You can tell when coffee has been sitting for too long, which seems to be typical for a lot of coffee shops, however you won’t find stale coffee here. Insomnia’s drip coffee is exceptional, fresh and tasty, and can be enjoyed on its own without having to be doctored up with sugar or cream. I appreciate Insomnia serves their own house brand Dapper & Wise roasted on site which makes them a stand out and one of my favorite coffee houses.
I ordered an Americano and the espresso was well extracted and balanced in flavor. Chocolatey macadamia notes with a bright floral finish.Roomy, comfortable atmosphere. Plenty of seating and natural light.
Good coffee and good selection of pastries
I go to the other Hillsboro location all the time. I order my regular order here and my Chai is JUST MILK and my bagel has bacon which I did not order and says so on my receipt. Seriously disappointed.
Coffee is great, of course, but I was not expecting to have the most amazing cinnamon roll of my life. Crusty and sugary on the outside; warm, moist and chewy on the inside, and topped with butter. It was phenomenal.
I enjoy having In Coffee House here in Hillsboro. Every once in a while my mocha is not quite right, but that's alright. I like their food. I wish they would make a veggie quiche. I really like their scones!! But there again I wish they would change them up a little or add a couple new ones to their case. We do go there once a week.
Fairly nice staff. Hot beverages were pretty good. Biscuit sandwich was marked down 58 cents because they were out of eggs.

Insomnia ruined coffee for me! The real Carmel Mocha was so perfectly balanced! Rich.frothy. the coffee was delicious, the chocolate and Carmel were present but not overpowering. I just wish I lived closer to a location! The cheddar garlic biscuit was an unexpected A+! I got one to “try” & I’m happy I did!
Great coffee but not for anyone that is in a hurry or is up early in the morning. They did recently push their hours back to 7am which is an improvement. 8am was ridiculous imo for a coffee place.
