Castor is one of our favorites in Corvallis. The ambience is classy, and the service is excellent. The cocktails are innovative and there are several local spirits options. We had shrimp cocktail and bread to start, shrimp perfectly cooked, not overdone. Great medium rare steak with Rogue Bleu cheese and perfectly cooked salmon. Great meal and great restaurant that supported their staff during the worst of the pandemic. We plan on returning soon!
We were here on a Wednesday that wasn't as busy as I know this place gets. The service was spot on. Cocktails were great. We got beef tartar, my fav. They warned us that they were out of potato chips and were serving it with bread, and offered me gluten free crackers. It was a pretty classic version. Nice and flavorful. We also got the honey roasted beets with goat cheese. It was sweeter than I was expecting, but the goat cheese was a nice balance, and they selected a perfect honey the beets. It had a nice complex flavor that matched perfectly with the earthy flavor of the beets. For dinner I had the shrimp and grits. So delicious. A unique take that still felt authentic. Very flavorful. My husband got the fish special, which was Salmon, caught that day. He gave me a bite. It was one of the best bites of salmon I have ever had. The cook and the seasoning were perfect. Only (totally random) complaint was the dish it came in had high sides that made it really difficult to cut the potatoes. A plate would have been much easier. Finished with the buttermilk panna cotta which was lovely. This is definitely a spot for a special occasion. So glad to have another high-end restaurant in town.
Amazing southern American restaurant in Corvallis! Definitely give a credit for southern American restaurants, you can barely find any in Oregon.I love their food taste and drinks too, I think it’s actually better than most of the 3 $ signs restaurants.Service are nice but it can be long wait even tho you sit down. I visited here couple time and it average take you 2 hours to finish your meal.
Always warm, friendly inviting and knowledgeable. Kitchen staff, bar staff and entire operation are fantastic. My only regret is we can't visit more often. Very fortunate to have this in town, and look forward to the next seasons menu.
was brought here for an interview so price was not of personal concern. very attentive and knowledgeable servers, with a rotating seasonal menu. i follow some dietary restrictions personally which does leave quite a bit of the menu (pork and shellfish based) less accessible, but the butternut squash tartine steals the show.
I am impressed by their dishes. It's a beautiful place hiding in downtown. You need to wait a little bit longer than you expect the time when your dishes come up. So I recommend people who is not in a rush and have long conversations with friends or family when coming to this place. Nice atmosphere. The price is a little bit high but it's worth it.
Edit: Castor is right to call me out for the tone of my original review. Here is a version that doesn't sound like a toddler throwing a fit.The food is reasonably priced for the quality, and was the one decent area of our experience. Once we were actually able to order, the food arrived quickly, our order was correct, and the food tasted great.The server was polite and friendly. However, the speed of service outside of that was absolutely unacceptable. We were there for an hour and a half and spent a solid hour total of that time just waiting with almost no interaction after we had been seated and after we had finished our meal. Half an hour to order food and get our drink order, and half an hour after eating to just pay for the meal.Since only 1/3 of the experience was reasonable, I'll give as close to 1/3 stars as I can.
The Corvallis community means a lot to me. I have always appreciated the union of the sciences and arts. To me, Castor reflects this connection. I'm impressed by the number of local purveyors they support and utilize. It saddens me to know so many people in our community struggled to keep their businesses afloat during the pandemic, and Castor's investment in the livelihood of our community - while providing its guests with excellently prepared cuisine - truly helps people feel secure and in good spirits. Castor is definitely in the heart of Corvallis. Cheers!
We had a fantastic experience all-around. We went in intending to have a drink and an appetizer— we ended up having that plus entrees and dessert. The staff were very knowledgeable and professional. Castor is a real gem.
Walking in feels like a bustling yet intimate atmosphere. Tapestries hung throughout and there is a labryinth of small semi-private dining areas that are perfectly lit. Full bar with fresh made drinks. Appetizers and entrees that can meet any palette with local ingredients. Staff were awesome, inviting and knowledgeable with a pleasantly slow cadence that allowed for a great experience. The appetizer menu reached just a little and had fun flair unique to this establishment. Downtown parking. Prices were ok considering quality and portions.
