We went there today, I had the pigman and my wife had the mother load. The brisket on my pigman had almost no flavor, no smokiness, no fat and was very dry. None of the other meat on my sandwich had any smoke, like it was cooked prior, then put into an oven with a little bit of wood pellets. The restaurant itself was filthy, the wall with the red Ryder had holes in it, the paint was not finished and there were flies everywhere crawling on the food. Our server (with the cross tattoo on his wrist/arm) was having a very loud inappropriate conversation with the other wait staff about getting on his knees for someone. I don't know how this place has this many good reviews, but there was nothing good about that place.

Got the BBQ sandwich. It was packed higher than we usually find at other BBQ places. Definitely will not leave hungry. We did not experience the problems of other reviewers. We had very good and quick service. No issues with our sandwiches.
We arrived in Roswell fairly late and had trouble finding a place that was open that wasn't fast food. Happened upon this place and was very glad we did! Great food, nice size portions, and friendly staff.
Don't be fooled by photos. BBQ is dry. It ranked below several other local bbq joints. This is bland corporate chain. Over 60 locations nationwide and they don't seem to care about quality control. On this memorable night. Computer system went down. They didn't bother to call their online clients to tell them there would be a delay... they had my phone. One lady gave up while I was standing there and was informed that the order was taken by a third party so the refund could take about 3 weeks. I hope poor showing was because of COVID-19. My order was scheduled for pick up at 7:30, I got my order 8:11. The order was luke warm and incomplete. It was probably not hot because you could see the staff opening to go boxes repeatedly to remember what was in the box and group things for the order. The manager must have been smoking by the dumpsters leaving the stressful customer relations to untrained kids. As for the quality of food, brisket was dry. C There was no bbq sauce in the bag. The chicken breast... you got it, dry. Sides mediocre... that's probably too much credit. This place wouldn't make it in Texas. Oklahoma should ask them to move their headquarters out of the state. I can't see how Roswell has kept Rib Crib afloat. Roswell has much better choices in bbq. If all BBQ joins in Roswell are closed, go to a grocery store buy bread, cold cuts and your favorite chips.
My family and I stopped here for dinner and quickly noticed that the restaurant was running at maybe 25% or 50% capacity due to covid. That part is understandable but we waited 40 minutes to get our food which we did not understand because the kitchen was not preparing a large number of orders. The server told us he was only workng there a week so maybe he forgot to ring in the order?? Not sure... We really enjoyed the food. Very filling and flavorful. Speaking of the service, I also noticed a table nearby had to get up and ask about their beer. So the overall impression is the reason for the 'average' rating.
The St. Louis ribs were ok but I have tasted much better and brisket was chewy and no taste. I also had the fries which tasted like they were made in old oil.. and got rot gut from it. Don’t think I will be going back to this place
