Oh those marionettes! Hanging there...floating above you as you enjoy Waterloo Style Mexican food. I consider it a landmark. The kind of American style Mexican food that you leave a pile of cheese behind after a finished meal. Fresh locally sourced veggies, cheese and meats I believe. The place is clean the food tasty but maybe a bit on the heavy side. Many of the employees have been there for awhile so I think its smartly run. Specials on weekdays which make it a reasonable choice. It's a popular spot at lunch and dinner time and I can only imagine what they could do if in a more high traffic spot. I can't argue with constantly fresh and will continue to swing in here from time to time.
Rudy's is the embodiment of identity crisis. Marionette adorn the entirety of the ceiling, yet the dining room tables has an early diner feel. It is a taco/more authentic Mexican restaurant yet the music was doo-wap... which I guess was to cater to the aging population that frequent here. The food was TERRIBLE. I don't know if anyone there knows what seasoning is, but the beef is. O more than browned hamburger. No cumin, no red pepper or taco seasoning. Not even any salt! It was bland as heated cardboard. If you order anything with shredded chicken, they use refried beans heavily as a filler. I was very disappointed. Especially for a such as we paid. I could have ordered a package from Amazon, used a shredder on the box, threw the shredded cardboard in a pan with a little beef fat, then put it in a tortilla and it would be the same, and much cheaper.
We hadn't been there in a while & things have changed. The mini chicken taco salad used to be very filling. It looks like a side salad now. The beef tacos didn't have much flavor.

First off, this Rudy's is very different than the dozen or so other Rudys' in the franchise, which are more like upscale Taco Bells. The menu at the Waterloo location is *completely* different. The food is of much higher quality. Secondly, this is not "authentic" Mexican food. There's plenty of good options for that in Cedar Valley. This is Americanized Tex-Mex done to perfection. They've used high quality, locally sourced ingredients for *decades* before such practice was commonplace. The decor is fantastic, though probably not to everyone's taste: there's a bunch of marionettes hanging from the ceiling, old albums adorn the walls, along with a wide array of kitsch from the 60's-70's. You can't beat the price and speed of service, and the beer selection is world-class.
we drove two hours to come to rudys. what a disappointment! the service was slow which would be okay but the food this day was way below average! the nachos had chips very little beef ,mostly fried beans LOTS of onions and salsa over load !!! plenty of jalapeños and black olives… in that order maybe a little cheese down under. i looked for a menu but didn’t see it here. no sour creme or avocado/guacamole ? huge disappointment! the positive side is the place has vintage decor and a huge collection of puppets that was really enjoyable. so sorry about the food i brought home special for my family. our order was well over 125$ also a bummer for the service and food we received.
This was not only the worst “Mexican” food I’ve ever had but perhaps the worst food I’ve ever had. The chips and cheese should never ever be ordered. You could buy the ingredients at the store and make it in the microwave just like they do for much cheaper. The price is not worth the food at all. Almost 60 bucks without tip for 2 Enchilada trios, chips and cheese disaster and a tiny ice cream? Wouldn’t recommend to anyone. Los Cabo’s is definitely the way.
Not worth the money they charge. The meat has ABSOLUTELY NO taco seasoning. Went there long time ago, thought we'd give them another chance. Never again. We'll stick with 3 Amigos!!
