Wow, what a fantastic culinary experience. I enjoyed the crispy spring rolls followed up by a delicious and generous chicken egg noodle pho. And the service is most excellent - I was warmly welcomed upon popping my head in, given superb recommendations, and served promptly. It was no frills, super delicious food, lovely atmosphere, and now I’m stuffed.

My husband and I make it a priority every Saturday to visit Pho Nouveau! We drool over the veggie pho and summer spring rolls! Every time we eat here I feel like we are adding 5-10 years to our life span. The pho broth is the most beautiful comforting feel good food you could ever imagine! It’s not food…it’s medicine for your soul! I LOVE this place, and no other pho restaurant in Boise can compare.

Delicious pho! Having been to Vietnam I can generally assess if a pho is good or bad, and Pho Nouveau is good! Wonderful servers too.

Quite possibly the worst pho I’ve ever had if you can call it that. There’s no flavor even after adding the super small amount of sauces and herbs you are given. The chicken is the driest chicken I’ve ever been served even after letting it “soak” in the flavorless hot water they call “pho”

My partner and I like to come here for their vegan pho with fried tofu - it is delicious and so filling! We love being served by Jayme, she truly offers exceptional service, and her personality always lights up our experience. It is fine dining with a comfortable atmosphere, and lovely service by lovely, kind people! Come here for a cozy time ❤️ Thanks for always making our evenings!

Best Pho in Boise! Hands down! :)

The WORST pho ever... very disappointing. The pho broth had zero flavor very light and bland tasted like water with noodles.. found bugs in the soup unsanitary disgusting zero cleanliness. Also ordered their rolls which the vegetables were extremely dirty had a bunch of dirt still on them did not clean. This is not the way to run a restaurant will definitely not be coming back!!! SAVE YOUR MONEY GO SOMEWHERE ELSE

This place is one of my favorite spots downtown to grab a quick bite. Their pho is consistently delicious, the accoutrements are always fresh, and the flavor is on point. Recently, I tried the bun bo hue and it was as good if not better than the bowl I had in Vietnam. Their cha giao is a PERFECT way to start a meal, we always take some home with us to heat up later. I havent had a bad thing off of this menu and the service is always great.

The big negative is that billed prices were a dollar more per item than menu prices, and no adjustment was given to match the menu prices, just “thanks I’ll tell my manager”. Even inexplicably told me I was not looking at their menu, which I accessed via their scan thing they handed to me. Excuse me?!Went for happy hour. Ordered summer rolls and sake. Waitress was pleasant, though service was slow. Rolls really good. Sake was not the one on menu, but okay.
