Land locked States normally have a difficult time getting decently fresh ingredients. As someone who has lived in Hawaii for a few years and using that as a measuring stick of this place has by far some of the best sushi in all of Fort Collins. Things to avoid is the octopus nigiri and any of the sake that's made in California. Salmon Egg (Ikura) is actually good here and have a variety of rolls. The miso soup is a must.The staff is on it. They understand the craft. And generally speaking they are pretty on top of making sure that you are taken care of without being completely overbearing. Sometimes as little as simple hand gestures to see if you're okay. It adds to the quiet ambiance. On the flip side they also know how to have a good time and bringing over an entire bottle of sake is not uncommon for them.Some say it's a little on the pricey side but I think you're getting what you're paying for here. This isn't some gas station where you're getting some generic rolls, this is a restaurant that serves sushi.
This used to be our favorite sushi restaurant in Fort Collins, so we kept giving it chances. Sadly, we've had 3 bad experiences there, and will not return. The quality of the food has deteriorated, and we got terribly sick after our recent visit. Three other friends shared that they also got sick after eating there on a different day. Our server was extremely rude and negligent. There are no gluten free options, apart from a few sushi rolls. We spent way too much to celebrate a special day, and my child and I left hungry.
Very authentic and the quality was outstanding! The fish was sliced to order, not pre cut. The quality of the ingredients and the service were both over the top!
Truly best sushi in Fort Collins. The environment is so cute and quaint and they also have really good saki. I would 100% go there again for a date night.
Ichiban. Number one!!! THIS is exactly what sushi should be. Super fresh, fantastic variety and prepared by a master. So glad we found this restaurant. I will never eat sushi anywhere else in Fort Collins. My only negative is that I did not discover sooner. True Japanese sushi experience without leaving home. Truly the best.
FOODIES BEWARE!!Last night on the recommendation of a friend that claimed Nimo’s is the best sushi in town, the reality set in that there isn’t great sushi in Fort Collins.One star for ambiance and one star for the tempura appetizer…My bf and I entered and were promptly seated and were eager to put an order in but were quickly disappointed…the waitress ‘warned us that a second order would take 45 mins to an hour so we add 2 more rolls. This is an unfortunate tactic when one simply wishes to dine and enjoy but they have a second seating and don’t want you to stay. (One star taken).Also the prices on many items we ordered had a $1 up charge that was not reflected on the menu (not a major issue) but the quality did not reflect the up charge.We ordered the sashimi dinner, several pieces of nigiri and two rolls (upon being ‘warned’).The sashimi dinner was half inedible by my standards and my bf continued to eat it because of his Midwest upbringing where you don’t waste food. Also the waitress described 6 fishes on the sashimi plate but the chef only put 5 varieties on the plate, I didn’t feel the urge to make a fuss at this point.The nigiri was average but the rice was unseasoned and slightly dry and crumbled when picked up with chopsticks (not sure if it was day old rice or left out out too long- one star taken.)Lastly the sushi rolls ordered were a spicy tuna and a salmon mayo- the salmon mayo was missing a crunch element that the waitress described and oddly both rolls tasted identical and we did not feel the need to order any further given the quality or lack thereof (star taken).In all, this sushi was highly unremarkable and not worth returning for us… we appreciate this restaurant’s attempts but there are obvious issues of communication between staff and kitchen, unlisted price changes, and overall a sense of you get what you get attitude that has me questioning these other reviews.If you’re under 25 or over 60, and drink beer/sake, then you’ll enjoy it here.
It's been a lot of years since I've visited Nimo's sushi. 20 years ago he told me that the most important part of sushi is the rice. I can honestly say Nimo makes the best sushi rice in town. The fish quality is outstanding. The Yellowtail belly is a definite winner - so is the Bonito, Toro, sweet shrimp, etc. I'll be back to get through the rest of the menu.
