We came here for a quick coffee stop on Saturday. And for the rest of the day - all we thought about was the coffee at Theory coffee roasters. We woke up early the next morning and came back and tried a bunch of coffees - the cappuccino was heaven in a cup!!! The mocha was great too. And did I say the pastries were yum? 1000% must do when in Redding.
Customer service is excellent they work well as a team are direct about the order time and provide the guest a warm and loving experience. Artwork is well placed and eating outside is pleasant.Quiche.Potato, egg, cheese, onion, fluffy and heavy, delicous. Bacon, crisp in every bite they infuse the mixturePlates, cups, and silverware. Loved the coffee and the vibe! Simple yet beautiful decor, high quality coffee and pastry (Bacon & cheese croissant and banana chocolate bread ❤️) and friendly staff -- what more can one ask for? Must visit if you appreciate a nice cup of coffee & pastry!We were there 3 out of our 3.5 day trip... And we miss it already!! The breakfast sandwich is simply phenomenal 12/10 points.
Theory use to be really great and the coffee is still a solids 7/10. But now it feels very transactional. Their is little to no conversation with the baristas. I use to go four days a week and try to engage with their baristas, but, they are either too busy, or don’t care. It seems all about the money, not the people. In addition to that their back patio area doesn’t match their vibe, it feels like a a slab of concrete with seating, which is fine. But I usually feel like I’m in a gross back alley. The front is quite lovely though. I’d give it a three star rating if the baristas were more people focused.
I have been going to Theory coffee for several years now. The quality of service and coffee I receive there is excellent. I have not once had a bad experience and I have been coming regularly since they opened their first store. HIGHLY recommend for the service, drinks and the CHEF Hannah is amazing, she does all the pastries and food there. They even have GF and refined sugar free options which helps for me because that's the lifestyle choice I have made...!!
Love the spot. They have reusable cups but don’t give them always by default. If you care about the environment, make sure to ask for a reusable cup before you order!
Coffee was on point, pastries were delicious, staff was courteous. There was a bit of a line but totally worth it. I will be returning when I’m in the area.
I had the breakfast sandwich, with a Egg Nog Latte. They were delicious. Nice atmosphere and service.

Coffee is very good, strong with bold flavors. I tried their butter beer soad coffee which was very different. Wouldn't recommend it though. Carbonation in coffee is just not my thing I guess. Otherwise, no complaints. Great little coffee shop.
