Incredible experience with the Chef’s Selection and wine pairing! Would recommend to anyone. Delicious food and service!

May I start by saying we are huge Matsu fans. We were one of the first customers, and have been many times to the restaurant and bar. Also we have dined at Alinea, Gaggan and spent time in Japan so we have run the gambit. Matsu and the team deserve all the accolades and praise. Cocktails amazing? Yes. Great food? Yes. Do they make you feel special on special occasions? Yes. Also they remember us which is too kind-we live 2 miles away and think this is an Oceanside gem. The new menu pricing has unfortunately priced us out of the restaurant but we will likely still come to the bar for a drink. Only recommendation-other than potentially offering a more $$$ friendly option is to keep having fun with the menu. The Naegi sando is a secret weapon - the ebi and other amazing dishes, don’t let go of your greatest hits in pursuit of the star. Be believe in you!

Incredible service from people who really care about the food, and are happy to nerd out over it!Great ambiance. Photo worthy. Fantastic date night.The Rock Carrot Crab Sansho had me thinking about it every day for weeks after I had it. Who would have thought carrot and crab would compliment each other so well?Also my wife raves about the cabbage wontons topped with caviar.Finally, try the waigu at your own risk. It may set the bar too high for even the nicest ribeye after you have it.Can't recommend enough! Come support local small business!

Super cool! Most amazing food & really friendly staff ?

Top-notch dining experience - truly a great value for Michelin star quality! We did the 4-course option and were impressed not only by the unique and thoughtful flavor combinations but also the excellent service. My favorite dish was the Satsumaimo (sweet potato) - it managed this perfect balance of sweet, salty, umami and a little bit of acidity with the kimizu. Also really enjoyed the understated elegance of the space. Proud to have such a gem in Oside!

Took my sister and daughter to Matsu in Oceanside for the 4 course dinner as a fancy girls’ night out!!! Enter a world to nothing short of amazing!The crispy pork belly ( second course and pic included )was the best all three of us have ever eaten anywhere in the world !! The duck breast (third course)was a melt in your mouth pleasure! While I am not a fish person my dinner guests are and they equally enjoyed the nuances of their dishes that I did not try.Each course we ate was a sensation to the senses and we purposefully each chose something different and shared bites! From the unique use of each ingredient to the beautiful presentations, you will not be disappointed. The chef and the staff are exceptional on all levels. Since Monday is a slower day ( for now) our waiter took the time to explain the 4 selections in each of the 4 courses. It was like music to our ears and mouths, a musical note for each ingredient that completed the dish!

Absolutely amazing experience. Booked the Chef's Counter for my post-engagement dinner and Chef William and all of the staff were fantastic. The food, cocktails, service were all outstanding. I can't rave about this place enough. If they don't win Michelin stars in the near future then the institution has lost credibility.

Pretty amazing experience here. You can choose 4 or 8 course, which you can choose 2 appetizers, 1 entree and 1 dessert from the set menu for 4 course, and it will be a omakase for 8 course. We did 8 course dinner. My favorite is the cuttlefish dish, with sunflower seeds, the whole flavor is insanely delicious. I also love a tempura style shrimp dish, it has a little bit Chinese flavor, it’s not too complex but really flavorful. 8 course is not too much, we felt right good after the whole meal. We also tried 5 cocktails and one sake, which are all good. I am very happy to have a wonderful experience for this Michelin style omakase Asian foods. It is very creative and modern but based on traditional ingredients and Asian taste profiles. My only suggestion is the dessert, which is more like a French dessert, nothing related with Asian inspiration. Why not to change the French chocolate to Japanese raw chocolate, or the ice cream to green tea flavor? We have so many good desserts in Asia, which Matsu can bring into their meal experience. Examples like Japanese Soufflé, cheesecake, Korean Bingsoo, Chinese rice cake with sesame fillings…. There are so many better desserts to end a perfect meal, also can be more fun. Go get your Michelin star!

I've been a fan of chef William since he came to oceanside with his famous chicken karage sandwich. When I heard he was coming out with a fine dining Japanese restaurant, I had to go. I took these photos of the food and it was amazing. The wagyu melted in my mouth, the tempura salmon had amazing taste and texture, and the oysters were sweet! Overall, Matsu is a place to visit!

Decided to give Matsu a try after a sub par experience at Valle in Oceanside. Which also host a similar multi course dinning experience. It was absolutely amazing! It’s usually tough for chefs to be flexible because I am vegan but Chef William reached out to me directly via email and said he would put together something special for us and that he did. Every course was amazing and the cocktails including one with ice from Japan were top notch too. We’re lucky to have such an amazing place in our neighborhood!
