Chef will i feel definetly puts love into his food. His seamoss drinks are super delicious and very healthy. I have been suffering with seasonal allergies since coming to Alabama and as I was speaking to a young lady standing behind me about it, Chef hands us both a shot of from what I believe to be ginger seamoss that was quite delicious. His sons cookies and bluberry lemon drop cupcake is also amazing. I'll be back Chef!! Continue what you are doing sir. Peace and Love
That trailer has seen better days. It's almost scary looking when you find this food trailer close to the water tower. The question was: Would the cover be a sign of it's content? Nah! The food from Chef Will is outstanding vegetarian, vegan food that tickles your palate. Being a vegetarian for more than 30 years, I never had anything that could compare. I deeply enjoyed the broad range of flavors and textures of the quinoa bowl, although it made me wonder what kind of a mad man would pack so many different traditions on one plate. The quinoa bowl underscored that plant based food is not incomplete and that it does not need a highly processed meat substitute. The food is old school in the best imaginable way and impressively inventive. The dish comes lightly spiced and herbed to let the veggies shine but you get a sauce on the side that works very well with the quinoa and the plantains. Best of all it is surprisingly affordable. Tip well, he deserves it.
I have been waiting for over a year now to try Chef Will's food, and it far exceeded my expectations. I had the blackened portobello peppersteak sandwich, and it blew me away. The sandwich was substantial, grilled to perfection and topped with a freshly made walnut-cheese-sauce. Chef Will was so nice, and let me try his house-made sea-moss shot - it was gingery, peppery, and woke me right up! I can't wait for our next trip out to Huntsville- Chef Will the Palate's food truck is a must for lunch or dinner in Rocket City!

My husband and I were referred by a friend of his, and we were Not disappointed. The food was amazing, the prices were very reasonable, and the portion sizes were enough for 2 meals. We'll definitely be back!
My husband and i had the mushroom wraps. They were OUTSTANDING. Some of the best food we have ever had. The gentleman that runs the food truck was extremely kind. A fabulous experience. I would recommend it to anyone. We are from Anniston but will make the drive to try the other items on the menu. 10/10!!!!
Bruh! It was so good! I'm not a vegan or a vegetarian, but that food was off tha chain. The portion size was huge! I couldn't eat it all in one sitting. I will be going back!! I highly recommend!!
All of the food was amazing! We stumbled upon Chef Will’s food truck while looking for vegan food. You can tell he takes pride in cooking each meal. The portobello pepper steak wrap was my favorite. Any time I’m in Huntsville I will be stopping to get his food.

This is the best Vegan food we've had to date. The pizza was interesting, pretty and awesomely good. The bean burrito was amazing as well. This is a lot of food, so bring an appetite!
