Top tier pastries. My favorite items are their pear danish (beautifully poached pear with vanilla bean pastry cream in a flaky pastry) and any of their seasonal fruit tarts (incredibly buttery crust). I ordered their Valentine's cakes earlier this year and was blown away. Great flavor combinations, amazing textures, and beautiful presentation.
Thierry is one of the only bakeries in Vancouver that makes all their pastries, including their croissants, from scratch on the premises. It is also one of the only bakeries in Vancouver that my French friends will accept as a real “boulangerie” for that reason. (In France you can only earn the title of a bakery if you make everything from scratch on site, although some bakeries are now importing factory-made croissant dough, which had sparked legitimate outrage and controversy in la belle France, but that’s another story.)What to order according to the staff in the realm of cakes and tarts: 1) chocolate marquise cake (for lovers of chocolate and hazelnut) 2) Millefeuille (“a thousand layers” with flecks of real vanilla bean in the pastry cream) 3) passion fruit cake (so tangy!)In sum, if you’re going to pay $4-6 for a croissant, come here!
Ordered some items to go as gifts and was terribly disappointed in the customer service and pastry presentation.First, the staff deliberately ignored me clearly waiting first in line, then when some more customers entered, the staff continued to ignore me to help everyone else around me instead.10-15 minutes later, I finally got served. My interaction was hostile (as if I personally insulted the staff for gently saying, “excuse me, I’m next”) and my pastries were presented like absolute garbage seemingly out of spite.I got two boxes, each with a slim chocolate cake and three macarons, and for whatever reason the cake was presented diagonally in the box with macarons touching the cake on literally every side. When I got home I had to not only repackage everything, but I also had to wipe down every single macaron from being smeared in chocolate.It’s hard to consider this Thierry location as a high-end dessert cafe when the staff are incredibly rude, possibly racist, then they literally throw your delicate pastries in a box like they’re Tim Bits.This location is temporarily closed for the holidays, but being honest, I think they should stay closed until they can turnover their awful staff.I certainly will not be missing anything about this place whether they reopen or close for good; either way, I will be getting my future desserts exclusively from Beta5 or Thomas Haas.Thierry = Terrible. Don’t waste your time or money here.
The new location is very beautiful! Spacious and lots of food cases that showcases their pastries, sweets and drinks! The not so little girl the time we were there that served my order was very sweet and friendly! The barista too was very welcoming!! Great job to their team!

I always have a hard time deciding what to get here because I want to get everything! I’m more of a fruity dessert type of person so I love that they have a mix of fruity and chocolatey desserts. Their tiramisu and passionfruit cake are my favourites. Also recently tried the yuzu grapefruit macaron and I’m in love! Other macarons I really like are salted caramel, cranberry and maple pecan. I always get the honeybush vanilla rooibos tea for something decaffeinated or the Spanish latte for something sweet and caffeinated.
Expensive, but worth it.I keep comparing this place to mid-range restaurant desserts. You eat your steak, and then you get the dessert menu, and it's $8 for a nice brownie with some ice cream. That always feels a bit overpriced to me, but I pay, and enjoy it.At Thierry, the prices are similar, but I have always felt it was worth every penny. The desserts - especially the little individual 'cake' pieces at the end closest to the entry - are all unique, and all absolutely delicious.I'm not enough of a foodie to properly explain how or why, but these desserts are truly a cut above.
This is first time I be here. Love this place. Very nice place comfortable clean and bright. Especially every thing we order are excellent.
